Contributor's comments: Jelly cakes were common where I grew up in South Australia (southern vales area). Often made with cubes of plain cake cut from a big block cake. Occasionally filled with cream but mostly not. Always used pink jelly - somehow, attempts with other kinds of jelly just didn't seem right!
