Empire

this referred to the meat that is called Devon in Queensland and Bologna in WA: Can I have an empire and tomato sauce sandwich for lunch please?

Contributor's comments: I was told some years ago that in Newcastle before WW1 Empire was known as German Sausage but in an act of patriotism the name was changed to Empire after WW1 began.

Contributor's comments: My wife came from Lismore NSW and the sausage in question was known as Byron after the Norco Co-Op factory at Byron Bay where the manufacture took place. I grew up in Taree NSW and it was always known as devon.

Contributor's comments: In Newcastle we ate 'empire'. It was not until about 1980 that 'devon' came into usage.

Contributor's comments: We definitely ate Empire in the Coalfields (Abermain). It was only in 'posh' Sydney that we heard about Devon. I also heard about the change from German Sausage.
